Savory Hemp & Turmeric Ricotta-Stuffed Mushrooms
These mushrooms offer a wonderful, earthy profile with the warmth of turmeric and richness from hemp oil. Their elegant appearance and unique flavor make them an ideal spring dish!
Ingredients:
- 12 large button mushrooms, stems removed
- 1 cup ricotta cheese
- ½ tsp turmeric capsule powder
- 1 tbsp hemp seed oil
- 2 tbsp grated Parmesan cheese
- 1 tbsp fresh chives, finely chopped
- Salt and pepper to taste
- Extra hemp seed oil for brushing
- Fresh parsley or thyme for garnish

Prep and Preheat:
- Preheat your oven to 180°C
- Line a baking tray with parchment paper.

- In a bowl, mix the ricotta cheese, turmeric powder, hemp seed oil, Parmesan, chives, salt, and pepper until smooth and evenly combined.

- Brush each mushroom cap lightly with hemp seed oil for a touch of richness.
- Fill each cap generously with the ricotta mixture, smoothing the tops with a spoon.
