Savory Hemp & Turmeric Ricotta-Stuffed Mushrooms

These mushrooms offer a wonderful, earthy profile with the warmth of turmeric and richness from hemp oil. Their elegant appearance and unique flavor make them an ideal spring dish!

Ingredients:

  • 12 large button mushrooms, stems removed
  • 1 cup ricotta cheese
  • ½ tsp turmeric capsule powder
  • 1 tbsp hemp seed oil
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp fresh chives, finely chopped
  • Salt and pepper to taste
  • Extra hemp seed oil for brushing
  • Fresh parsley or thyme for garnish

Instructions:

  1. Prep and Preheat:

    • Preheat your oven to 180°C
    • Line a baking tray with parchment paper.
  2. Prepare the Filling:

    • In a bowl, mix the ricotta cheese, turmeric powder, hemp seed oil, Parmesan, chives, salt, and pepper until smooth and evenly combined.
  3. Stuff the Mushrooms:

    • Brush each mushroom cap lightly with hemp seed oil for a touch of richness.
    • Fill each cap generously with the ricotta mixture, smoothing the tops with a spoon.
  4. Bake:

    • Place stuffed mushrooms on the prepared baking tray and bake for 15-18 minutes, until the tops are golden and the mushrooms are tender.
  5. Garnish and Serve:

    • Sprinkle fresh parsley or thyme over the mushrooms for garnish and serve warm.
