Lemon Turmeric Shortbread

Ingredients:

  • 1 cup plain flour

  • ½ cup unsalted butter (room temp)

  • ¼ cup icing sugar

  • Zest of 1 lemon

  • ½ tsp turmeric powder

  • Pinch of black pepper

  • Pinch of salt

Method:

  1. Preheat oven to 160°C.

  2. Cream butter and icing sugar together until smooth.

  3. Stir in lemon zest, turmeric, pepper, and salt.

  4. Add flour and mix into a soft dough.

  5. Roll out to 1cm thickness and cut using bunny or egg-shaped cutters.

  6. Place on lined tray and bake for 12–15 mins or until edges are lightly golden.

  7. Cool and dust with extra icing sugar (optional).
