Lemon and Coconut Hemp Truffles

These zesty, nutty, sweet nuggets are called “truffles” for a reason—they use the nutritious substance of ground almonds and our 13 Seeds Hemp Hearts for a satisfying bite that feels rich and decadent while still being nutritious! These truffles are help together with natural coconut oil and our 13 Seeds Hemp Honey, and are flavoured with yummy vanilla, lemon, and coconut. They’re a breeze to make, and act as a great dessert substitute for healthy families. Pop one of these plant-based truffles on your way out the door for a quick breakfast on the go or bring a container to the gym to share with friends!
Ingredients:
1 ½ cups desiccated coconut
¾ cup ground almonds
¼ cup 13 Seeds Hemp Hearts
4 tablespoons coconut oil
4 tablespoons 13 Seeds Hemp Honey
zest of one lemon
juice of one lemon
1 teaspoon pure vanilla essence
a pinch of sea salt
extra desiccated coconut, for coating
Method:
1. Put all ingredients into a food processor and blend for 1-2 minutes, or until the mixture starts to forma a dough
2. Using your hands, form the mixture into small balls about the size of a walnut
3. Put the extra coconut into a bowl and roll each ball in the coconut until well coated. If you prefer, you could use the sesame seeds or 13 Seeds Hemp Hearts instead of coconut.
4. Chill in the fridge for at least half an hour to set.

I have made these for friends as Christmas gifts
They look lovely packaged on a Christmas plate with Apricot balls and the Hemp and Chocolate Bark and I can store them in the freezer until ready to gift in a few days and the bonus is no baking!
