Roasted Pumpkin & Hemp Seed Oil Salad

Ingredients:

  • 2 cups roasted pumpkin (cubed)
  • 2 cups mixed greens (baby spinach, rocket)
  • ¼ cup feta cheese (optional)
  • ¼ cup toasted walnuts
  • 1 tbsp hemp seed oil
  • 1 tbsp balsamic vinegar
  • Salt & pepper to taste

Instructions:

  1. Roast the pumpkin cubes at 200°C until tender (about 20 minutes).
  2. Toss greens, feta, walnuts, and roasted pumpkin in a bowl.
  3. Drizzle with hemp seed oil and balsamic vinegar.
  4. Season with salt and pepper, then serve!
