Winter Greens & Quinoa Salad with Hemp Oil Dressing
Salad Ingredients:

1 cup cooked quinoa (warm or room temp)

1 cup kale, chopped and massaged with lemon juice

1/2 cup roasted sweet potato cubes

1/4 cup pumpkin seeds
-
Handful of fresh herbs (mint, parsley or coriander)
Dressing Ingredients:

2 tbsp hemp seed oil
-
1 tsp turmeric powder
-
1 tsp Dijon mustard
-
Juice of 1/2 lemon

Salt & pepper to taste
Instructions:

Roast sweet potato in the oven at 200°C with a little olive oil until golden.

Cook quinoa as per packet instructions and set aside.

In a small jar, shake together dressing ingredients.

Toss quinoa, kale, sweet potato, pumpkin seeds and herbs in a bowl.

Drizzle over the dressing just before serving.
