Turmeric-Spiced Lentil & Veggie Soup
Ingredients:
- 1 cup red lentils, rinsed
- 1 carrot, diced
- 1 zucchini, diced
- ½ onion, chopped
- 1 tsp ground turmeric (or 1 turmeric capsule, opened)
- ½ tsp cumin
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions:
- Sauté onions, carrots, and zucchini in olive oil over medium heat.
- Add lentils, turmeric, cumin, and vegetable broth.
- Simmer for 20-25 minutes until lentils are soft.
- Blend slightly for a creamy texture, or leave chunky. Season & serve!
