Creamy Mushroom and Spinach Pasta with Hemp Seed Oil
Warm up with our creamy mushroom and spinach pasta, featuring hemp seed oil for added omega-3 and omega-6 fatty acids.
Serves 2-3 people
Ingredients:
- 200g pasta of your choice
- 2 tablespoons hemp seed oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 200g mushrooms, sliced
- 2 cups fresh spinach
- 1 cup vegetable broth
- 1/2 cup coconut milk
- 2 tablespoons nutritional yeast
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the hemp seed oil over medium heat. Add the onion and garlic, sauté until softened.
- Add the mushrooms to the skillet and cook until they release their juices and start to brown.
- Stir in the spinach and cook until wilted.
- Pour in the vegetable broth and coconut milk. Bring to a simmer.
- Stir in the nutritional yeast, thyme, salt, and pepper.
- Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
- Serve the pasta hot, garnished with fresh parsley.
