Creamy Mushroom and Spinach Pasta with Hemp Seed Oil

Warm up with our creamy mushroom and spinach pasta, featuring hemp seed oil for added omega-3 and omega-6 fatty acids.

Serves 2-3 people

Ingredients:

  • 200g pasta of your choice
  • 2 tablespoons hemp seed oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 200g mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • 2 tablespoons nutritional yeast
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the hemp seed oil over medium heat. Add the onion and garlic, sauté until softened.
  3. Add the mushrooms to the skillet and cook until they release their juices and start to brown.
  4. Stir in the spinach and cook until wilted.
  5. Pour in the vegetable broth and coconut milk. Bring to a simmer.
  6. Stir in the nutritional yeast, thyme, salt, and pepper.
  7. Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
  8. Serve the pasta hot, garnished with fresh parsley.
