Warm Quinoa & Roasted Veg Bowl with Hemp Dressing
Ingredients:
- 1 cup cooked quinoa
- 1 cup roasted sweet potato, diced
- ½ cup roasted brussels sprouts
- ½ cup cherry tomatoes, halved
- 1 tbsp hemp seed oil
- 1 tbsp tahini
- Juice of ½ lemon
- ½ tsp turmeric
- Salt & pepper to taste
Instructions:
- Roast sweet potatoes and brussels sprouts at 200°C for 25 minutes.
- Mix quinoa, roasted veggies, and cherry tomatoes in a bowl.
- In a small bowl, whisk together hemp seed oil, tahini, lemon juice, turmeric, salt, and pepper.
- Drizzle dressing over the bowl & serve warm!
