Warm Quinoa & Roasted Veg Bowl with Hemp Dressing

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup roasted sweet potato, diced
  • ½ cup roasted brussels sprouts
  • ½ cup cherry tomatoes, halved
  • 1 tbsp hemp seed oil
  • 1 tbsp tahini
  • Juice of ½ lemon
  • ½ tsp turmeric
  • Salt & pepper to taste

Instructions:

  1. Roast sweet potatoes and brussels sprouts at 200°C for 25 minutes.
  2. Mix quinoa, roasted veggies, and cherry tomatoes in a bowl.
  3. In a small bowl, whisk together hemp seed oil, tahini, lemon juice, turmeric, salt, and pepper.
  4. Drizzle dressing over the bowl & serve warm!
