Instructions:
In a large pot, heat the hemp seed oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
Add the cubed sweet potatoes and sliced carrots to the pot, and cook for another 5 minutes, stirring occasionally.
Pour in the vegetable broth, bring to a boil, then reduce the heat and let simmer for 20-25 minutes, until the vegetables are tender.
Stir in the coconut milk, turmeric, and ground cumin. Season with salt and pepper to taste.
Use an immersion blender to blend the soup until smooth, or transfer the soup in batches to a blender and blend until smooth.
Serve hot, garnished with fresh coriander leaves.
