Golden Immunity Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1 tsp fresh ginger, grated

  • 1 tsp turmeric powder

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 1 cup red lentils

  • 4 cups vegetable stock

  • Salt & pepper to taste

  • 1 tbsp hemp seed oil (drizzle before serving)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger. Sauté until fragrant.

  2. Stir in turmeric, carrots, and celery. Cook for 5 minutes.

  3. Add lentils and vegetable stock. Bring to a boil, then reduce to a simmer.

  4. Cook for 20–25 minutes, until vegetables and lentils are soft.

  5. Blend lightly with an immersion blender (optional).

  6. Season with salt and pepper. Serve warm with a drizzle of hemp seed oil.
