Golden Immunity Soup
Ingredients:

1 tbsp olive oil

1 onion, diced

3 garlic cloves, minced

1 tsp fresh ginger, grated

1 tsp turmeric powder

2 carrots, chopped

2 celery stalks, chopped

1 cup red lentils
-
4 cups vegetable stock

Salt & pepper to taste

1 tbsp hemp seed oil (drizzle before serving)
Instructions:

In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger. Sauté until fragrant.

Stir in turmeric, carrots, and celery. Cook for 5 minutes.

Add lentils and vegetable stock. Bring to a boil, then reduce to a simmer.

Cook for 20–25 minutes, until vegetables and lentils are soft.

Blend lightly with an immersion blender (optional).

Season with salt and pepper. Serve warm with a drizzle of hemp seed oil.
