Golden Carrot & Turmeric Muffins
Ingredients:

1 ½ cups grated carrot

2 eggs
-
½ cup almond milk
-
⅓ cup maple syrup or honey
-
¼ cup cold-pressed hemp seed oil
-
1 ½ cups wholemeal flour
-
1 tsp turmeric powder (3 TheraJoint+ capsules)

1 tsp cinnamon
-
1 tsp baking powder
-
½ tsp baking soda
-
Pinch of salt
Method:

Preheat oven to 180°C (160°C fan forced).

In a bowl, whisk eggs, almond milk, maple syrup, and hemp seed oil.

Stir in grated carrot.

In a separate bowl, mix flour, turmeric, cinnamon, baking powder, soda, and salt.

Fold dry ingredients into wet until just combined.

Spoon into muffin cases and bake for 18–20 mins or until golden.

Cool and enjoy with a dollop of Greek yoghurt or nut butter.
